Christmas?

What can a gluten free eater look forward to at Christmas?  Unfortunately, we have to stay away from a lot of casseroles, if we haven't made them ourselves and sometimes turkeys are basted with gluten containing materials.  Gravy might be out, if you don't make it yourself.    I'll tell you what I'm going to have this Christmas.

For Christmas morning breakfast, my mother in law makes fried ham, eggs, biscuits, grits and gravy.  I can have 2 of those.  The eggs and ham.   My sister in law is making a gluten free hash brown casserole and I'll bring my own biscuits for my son and I. 

I like to use the drop biscuit recipe on the back of the Pamela's baking mix and add a few of my own modifications, a 1/4 of a cup of canned pumpkin, a 1/4 of a cup of sugar and 1 teaspoon of salt.  It sounds weird, but it's yummy and quick, moist and delicious.

Here's the hash brown recipe:
Servings: 8
Prep Time: 15 Min.
Cook Time: 1 Hr.
What you need:
* 32 oz. package frozen shredded hash browns
* 1 c. cold 2 % milk
* 1 Tbsp. cornstarch
* 1 tsp. chicken bouillon
* 1/2 tsp. salt
* 1/2 c. chopped onion
* 1 c. sour cream
* 2 c. grated cheddar cheese (or bread crumbs from gluten-free bread tossed with melted butter)
What to do:
1. Spread hash browns in the bottom of a 9x13-inch baking pan.
2. In a small saucepan mix cold milk and cornstarch with a wire whisk. Add bouillon, salt, and onion.
Heat to a boil, stirring constantly.
3. Remove sauce from heat and stir in sour cream. Pour over hash browns.
4. Top with grated cheese. Cover with aluminum foil and bake at 375 F for 1 hr.
(Increase cooking time by about 15 min. if using diced hash browns.)
Provides 288mg calcium (29% DRI).

We probably will also do the cinnamon pancakes at least once while my son is home, for a special breakfast. (search this blog for that recipe).
 
For Christmas dinner, my family has soup.  Since one family member is gluten free and dairy free, I make him taco soup with this recipe:

1 can kidney beans
1 can pinto beans
1 can black beans
1 can rotel
1 pound ground beef (cooked and drained)
1 package gluten free taco seasoning.  (El Paso)

You just fry the hamburger, add everything else and eat it with corn chips.  The members of the family who are not dairy free add cheese and sour cream.  

My brother also makes a lovely loaded potato soup, which is easy enough to do.  Just leave canned cream soups and flour out of it.  If it needs thickening, use cornstarch.

Other ideas for Christmas dinner could include steak and potatoes and salad (without croutons).   If you feel like you need a traditional casserole with a cream of something soup, use Progresso creamy mushroom and if you want crackers on it, use the En-R-G crackers.  They're good and they have the right texture for crumbling on a casserole.
