Yummy.

I cannot express how much my family enjoys Pamela's cake mix.  This stuff is seriously yummy.  I made a cake and took it to a game night party last night and everyone loved it.  One person asked me if it was cake or brownies because it was so moist and so chocolatey.  I like it better than the Betty Crocker mixes because it makes a whole 13 x 9 cake or 24 cupcakes.

I picked up some of their frozen entrees this week.  My son didn't care for the dirty rice bowl (but in all fairness, he's been sick all week and his taste buds are not quite normal) but my daughter loved the Blackened Chicken and Yellow Rice bowl.  Inexpensive.  Easy.  Gluten free.  Tasty.   Can't beat that.

Peanut butter cookies.

1 cup sugar
1/4 cup water
1 tablespoon or 1 package of hot chocolate mix.

Put above ingredients in a saucepan, stir a couple of times, then stop stirring.  Bring to a boil.   When it comes to a full, rolling boil, set a timer and time it for 1 minute.  Remove from heat.  Add the following.

1 cup peanut butter
1/2 cup gluten free oats or other gluten free cereal, could be the new gluten free Rice Krispies or Koala Crunch.

Drop by spoonfuls onto aluminum foil.

Zatarains Dirty Rice

I made Zatarain's gluten free dirty rice mixed with ground beef the other day and my family ate it up.  It was gone in minutes and my daughter asked me to make it again this week.  That's a hit.  :-D
